Primary production and processing requirements for meat and meat products

Food Standards Aust ralia New Zealand is developing a Primary Production and Processing Standard for Meat and Meat Products (Proposal P1005) as part of a series of national food safety standards.

PPP Standards (which only apply in Australia) aim to strengthen food safety and traceability throughout the food supply chain from paddock to plate.

There is a currently a standard for meat in Chapter 4 of the Code. However, this is limited to safety requirements for ready-to-eat meat. FSANZ will incorporate safety requirements in the PPP for meat into that standard.

The PPP Standard will set out obligations for primary producers and processors of meat and meat products at critical points in the food chain, such as for primary producers the control of inputs and chemicals and animal identification.

What meat is covered by the Proposal?   

Meat and meat products from farmed cattle, pigs, sheep and goats, harvested goats and rendered products will be covered by the proposal. Farmed minor meat species, e.g. emu and ostrich meat and wild game animals, will be addressed later.

FSANZ is working with industry, government and consumers on the standard. During the standard work we will :

  • validate the effectiveness of current food safety measures to protect consumers from existing and emerging threats to human health  
  • examine whether there are benefits to the domestic and export meat industries in a single Australia-wide meat standard to be included into State and Territory and export control legislation  
  • ensure that Australia has through-chain control of meat safety to assure customer confidence in the safety of our meat both in Australia and overseas.
